Tofu Ricotta Cheese
Ingredients
- 1 block Tofu soft, firm, or extra firm
- 2 tbs Nutritional yeast
- 2 tsps Soy sauce or white miso paste
- 1 clove Garlic or 1/2 tsp garlic powder
- 1/2 Lemon juice
- pinch Salt to taste
- 1-2 tbs Olive Oil Optional
Optional ingredients for different meals
- 2-3 tbs Fresh basil leaves For pasta dishes
- 1 cube Veggetable buillon For savory dishes. Lessen salt by omitting soy sauce or miso paste.
- 2-3 tbs Sundried tomatoes Chop and mix for added flavor.
- 2-3 tsps Marinated red peppers For added flavor and used as a spread
Instructions
- Crumble tofu. Mix in a food processor or blender all the ingredients and blend until creamy.
- Makes 2 cups.
- Leftovers can be kept in the refrigerator up to 4 days.
